Ingredients

  • 4 rectangles of aluminum foil (12x16 - inch)

  • 4 salmon filets (6 to 8 ounces each)

  • 3 tablespoons of olive oil (you can adjust as needed)

  • 1 teaspoon of Greek seasoning

  • 1 cup of diced cherry or grape tomatoes

  • 4 quartered marinated artichoke hearts

  • 3 tablespoons of minced red onion

  • 3 tablespoons of halved, pitted Kalamata olives

  • 1/2 lemon (zested and juiced)

  • 2 tablespoons of minced fresh parsley (plus parsley sprigs for garnish, optional)

  • 1 tablespoon of balsamic vinegar

  • 2 cloves of minced garlic

  • 1/4 teaspoon of red pepper flakes (optional)

  • Salt and freshly ground black pepper

  • 1 lemon cut into wedges (optional)

Directions

  1. First, preheat your oven to 400°F (200°C). Then, brush a little olive oil in the center of each foil rectangle.

  2. Put a salmon filet in the middle of each foil sheet. Lightly brush the filets with olive oil and sprinkle them with Greek seasoning.

  3. In a small bowl, mix together the tomatoes, artichokes, onion, olives, lemon zest and juice, minced parsley, balsamic vinegar, garlic, red pepper flakes, and 1 tablespoon of olive oil. Add salt and pepper to taste.

  4. Spoon the tomato mixture evenly over the salmon filets. Fold the long ends of the foil over the filets and crimp them twice, making sure the foil doesn't touch the food. Pinch the ends of the packet closed.

  5. Place the packets on a rimmed baking sheet.

  6. Bake the packets in the center of the preheated oven for 12 to 15 minutes. Use an instant - read thermometer to check; it should read 145°F (63°C) when inserted into the center of the filets through the foil.

  7. To serve, put the foil packs on serving plates. Open the packets, drizzle with any extra olive oil, add parsley sprigs if you want, and serve with lemon wedges.
