1 1/2 pounds of cod filets

1 teaspoon of olive oil

1 1/2 teaspoons of Greek seasoning

1/3 cup of pitted Kalamata olives

1/3 cup of roughly chopped, drained artichoke hearts in brine

1/4 cup of julienned, drained sun - dried tomatoes packed in olive oil

2 teaspoons of freshly - squeezed lemon juice

3 cloves of garlic, minced

1 tablespoon of chopped fresh parsley (or as needed)

First, preheat your oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil and spray it with cooking spray.

Take a paper towel and pat the fish filets dry. Put the cod on the baking sheet. Lightly coat the tops with olive oil and sprinkle with Greek seasoning.

In a small bowl, mix the Kalamata olives, artichoke hearts, sun - dried tomatoes, lemon juice, and garlic. Then evenly spoon this mixture over the filets.

Bake the cod until it flakes easily with a fork. This usually takes 14 to 16 minutes. The internal temperature should reach 145 degrees F (63 degrees C). The baking time might change a bit depending on how thick the filets are.

Use a large spatula to carefully move the cod and the topping to a serving dish. Garnish with chopped parsley and serve right away with a lemon wedge.
Cook’s Note
Cod is very flaky. To prevent it from breaking, use a large spatula like a fish spatula to take the fillets off the baking sheet. If you don't have Greek seasoning (it can be hard to find and pricey), there's a great recipe on this site to make your own. Any firm white fish can be used in this recipe.
