Sneaky Veggie Delight: Garlic Mashed Cauliflower

I made garlic mashed cauliflower the other day, and my husband couldn't resist. He sampled some of what he thought were β€œpotatoes” right from the skillet and said they were delicious! So, if you're looking to sneak some veggies onto your family's dinner plates, swap out mashed potatoes for this. Your secret's safe with me.

Ingredients

  • 2 tablespoons unsalted butter

  • 1 tablespoon minced garlic (adjust to taste)

  • 2 pounds frozen riced cauliflower, thawed

  • 1 teaspoon salt (adjust to taste)

  • 1/4 teaspoon ground black pepper

  • 1 pinch nutmeg (adjust to taste)

  • 1/2 cup chicken broth

  • 1 tablespoon snipped fresh chives for garnish (optional)

Directions

  1. Melt the butter in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds until it smells great.

  2. Stir in the thawed riced cauliflower, salt, pepper, and nutmeg. Pour in the chicken broth, bring it to a boil, and keep stirring often.

  3. Cover the skillet and cook for about 8 minutes. Then, take off the cover and keep cooking and stirring until most of the liquid has evaporated (this takes an extra 5 - 8 minutes).

  4. Use an immersion blender to blend the cauliflower until it's smooth. If you don't have an immersion blender, scoop the cauliflower into a regular blender. Once it's smooth, put it in a serving bowl and garnish with snipped chives if you like.
